Breakfast Bowls Anyone?


That right there is a big bowl of delicious! My work days are starting earlier & lasting longer. I am extremely grateful for all the ways my business continues to grow but making sure I stay fueled has gotten harder. I needed a breakfast that was easy to prepare, would energize & nourish me, plus it had to taste amazing. This was the result...Quinoa Breakfast Bowls.


Okay, before you think there is no way quinoa for breakfast could be good, just trust me here & keep reading.


Ingredients:

1 cup uncooked quinoa, rinsed

2 cups water

1 teaspoon maple syrup

1 teaspoon cinnamon

1 apple diced (blueberries are great also)

1/4 cup raisins

1/4 cup shredded unsweetened coconut

Plant based milk

Toppings: sliced banana, chopped crystallized ginger, honey, cinnamon, chopped nuts, etc.


Placed the rinsed quinoa in a pot with water, maple syrup & cinnamon. Prepare according to package directions. While cooking, dice the apple & measure out ingredients. Once the quinoa is done, transfer to a bowl. Add the apple, raisins & coconut. Toss together. This is going to make 4 servings easily so you can now store in the fridge to have ready in the mornings. When you are ready to serve, pour your favorite plant milk over it. Heat up on the stove or in the microwave. Top with whatever goodies you crave. My favorite is sliced banana, chopped crystallized ginger, a little more cinnamon & a drizzle of raw honey. Now enjoy!!!


Quinoa is packed with protein & fiber, plus it is rich in calcium. Quinoa is a super food loaded with nourishing vitamins & minerals like folate, zinc, manganese, magnesium, iron, B vitamins, potassium & more. I feel so nourished eating this & I have the energy to make it through a busy morning full of seeing clients. I hope you give it a try & love it as much as I do.
